Chicken Chile Verde
Okay... So this is no homemade authentic mexican recipe passed down from generations, but it IS delicious, fast, and easy! A beautiful friend of mine introduced me to this recipe a few years ago and I've loved it since. I'm pretty sure she came up with it, So thank you, Christina!!!
Ever want to just pick something off of the grocery shelf and KNOW it's going to be good? I dread buying any store bought chile. (aka salsa- FYI for the gringos ;) It's one thing I am very picky about. So when Christina introduced me to this salsa verde, I was a happy camper. It has my stamp of approval.
So here are your ingredients:
4 skinless boneless chicken breasts
Herdez brand salsa verde 16oz jar
1 tbsp olive oil
1 tsp minced garlic
1/2 cup cilantro
1/2 cup diced onion
1 large lemon
whole wheat tortillas
In a large skillet start to simmer your olive oil. Cut chicken breasts into small chunks or slices. I prefer 1/2 in-1 in pieces. Cook chicken on med-high and add in your garlic when it appears half way done. I think the chicken is best when it has some crisp edges to it. ( not dry, just the outer layer should be golden) once the chicken is done, lower your heat to simmer, pour in your salsa verde, and squeeze in the juice of 1 lemon. Stir and let it simmer for a few minutes. Serve it in tacos, in a bowl, in a burrito, or however you'd like. Top it with your onions and cilantro, and there it is. Easy and delicious.
