Whole Wheat Turkey Lasagna


This was my first attempt at lasagna and it turned out pretty great. It helps having a simple recipe to follow! I followed the Hodgson MIll Old Fashioned recipe and changed it up a bit, by using turkey instead of beef and more garlic. Mmm.. garlic! Love the smell and taste of garlic...in a meal and not on your breath, so have some mouthwash on hand ;) lol 

Whole wheat turkey lasagna 
1lb. lean ground turkey
3 cloves garlic, minced
1 Tbsp. parsley flakes
1 Tbsp. basil
1-1/2 tsp. salt
2 cups tomatoes
2 (6oz.)cans of tomato paste
1 box Hodgson Mill Whole Wheat Lasagna
12 oz. low-fat cottage cheese
12 oz. low-fat ricotta cheese
2 beaten eggs
1 tsp. salt
1/2 tsp. pepper
2 Tbsp. parsley flakes
1 lb.reduced fat Mozzarella cheese
1/2 cup shredded parmesan 

Brown meat slowly; add next six ingredients to meat. Simmer uncovered about 1/2 hour. Cook lasagna noodles according to cooking instructions. In a bowl, combine cottage cheese with the next five ingredients. Place 1/2 noodles in 13x9x2 inch baking dish; spread 1/2 cheese mixture over noodles, add 1/2 Mozzarella cheese and 1/2 meat mixture. Repeat layers and top with parmesan.  Bake at 375 degrees F for 30 minutes. Serves 6 to 8.




This made more than enough for Josh,Corbin, and I, So we froze half of it for another meal. Which will come in handy for a meal in a pinch!
